Bringing bold flavours, premium produce, and signature hospitality to the heart of the action, Stoke-Grill is a concept designed specifically to match the thrill of the game.

With Stoke-Grill, the Marvel Stadium, Delaware North and Stokehouse teams have collaborated to deliver a bold new dining experience that lifts the Medallion Club’s Premium Dining offering to a new level.
With a powerhouse grill serving flame-kissed cuts, fresh seafood and unapologetic flavours, Stokehouse Precinct Executive Chef Jason Staudt has expertly crafted a menu inspired by the heat of the grill and the energy of the stadium. Taking cues from Stokehouse’s produce-driven and bold approach to the menu, the dishes are grill-led and favour seafood signatures - bringing the best of the surf to the turf of Marvel Stadium.
“Creating a concept specifically for Marvel Stadium has been inspiring. Around the world, stadiums are delivering world-class, premium dining experiences, so we’re excited to be a part of that at Marvel, and to deliver a dining experience that matches the excitement of what’s happening out on the field,” says Staudt.
Guests can expect dishes like a 300g whole prime rib roast with smoked bone marrow and salsa verde, seared John Dory with leek top mustard and caviar butter sauce; 500g grain-fed bone in dry aged sirloin; half or whole southern rock lobster tail, chilli lime butter, alongside sides like shoestring fries with tarragon aioli or triple cooked potatoes and burnt oregano.
Smaller plates include Stokehouse Restaurant’s iconic saltbush and vinegar potato cake; mixed crudo, tuna, kingfish, market fish with olive and marjoram dressing, and a spanner crab dog, with lime and coconut. For a more casual pre-game bite, Stoke-Grill will offer a take on a shaved prime rib sandwich, served with jus on the side. To finish, guests can look forward to the crowd-favourite Stokey date pudding, with vanilla ice cream and butterscotch, or a selection of cheeses and accompaniments served from a cheese trolley.
